Egg Bites

These Egg Bites are great for when you want something tasty and simple to munch on. The ingredients are simple to pack for camping or day trips even. If you're heading out on the road, try prepping the veggies before you leave so you save time and cleanup.This recipe can be adjusted to your liking by adding any vegetable to the mix! 

The silicone baking cups make it easy to portion your recipe and share your snack with others!

 

GoSun Sport EGG BITES 

 

Prep Time: 10 Minutes

Cook Time: 50 Minutes

Servings: 7 snack size portions/ 2 meals 

Total Time: 1hrish (Given that you have full sun)

Ingredients

  • 3 eggs mixed with a little water
  • 1/4 of a bell pepper*
  • 2 mushrooms
  • 1 tbs oil**
  • Salt and pepper

* You could use a variety of different fillers: bacon, ham, tomato, spinach, onions... all up to you!

** We suggest using coconut, avocado or vegetable oils as they have a higher smoking points (more suitable for higher cooking temperatures). 

Procedure

  1. Gather your GoSun sport and all required ingredients. 
  2. Set your cooker up appropriately facing the sun reflectors closed to protect from overheating.
  3. Cut veggies into bite size pieces. Toss in oil and desired seasonings. 
  4. Line the cooking tray with your vegetables to roast them before adding them to your silicone baking cups. (15 mins)
  5. Beat eggs with water.
  6. When the vegetables are tender (or cooked to your liking) remove from cooking tray.
  7. Wipe out the cooking tray and add the 7 silicone cooking cups to the tray. Evenly distribute your vegetables among the cups.
  8. Top the vegetables with the scrambled eggs.
  9. Allow to cook for 45 minutes or until all the egg is fully cooked. Top with cheese for the last 5 minutes and leave the cooking tray slightly pulled out from the tube to vent moisture.
  10. When the egg bites are finished cooking, allow them to sit for 5 minutes to cool. 
  11. OPTIONAL: Top with your favourites!: Avocado, hot sauce, more cheese...or smoosh between an English muffin!
